Toni Fercher
He is both the head chef and at the zenith of his craft: chef and local hero Toni Fercher is a passionate master of his trade. For years, he and his spirited team at our restaurant in Lanersbach have been making the hearts of discerning gourmets beat faster.
Toni's credo: tradition modernity harmonise perfectly. When he combines classic Tyrolean cookery culture with international verve, the result is always perfect. It is eye-catching, refined, colourful and healthy
This perfection, however, comes from more than just good fortune. After all, Toni only "plays" with quality products from the region. Game, lamb and veal take the shortest route to him.
Together on a speciality course
Toni's vocation to create unique flavour experiences has also resulted in his most famous dish: his interpretation of Tuxer Steinschaf lamb. It is an unrivalled delicacy in which Toni has invested much more than the work in the kitchen.
Franz Frankhauser, breeder of the Tuxer Steinschaf and Toni's good friend, enables our award-winning chef to be very close to the product at all times.
And moreover, the two have fulfilled their dream of having their own Black Angus breed. Since Black Angus beef has a fixed place on our menu, dining in our award-winning restaurant is once again something special.
